Why metric?

  • 260 g red lentils (dry), rinsed
  • 2 capsicums, sliced (300 g)
  • 300 g zucchini, cut into half-moons
  • 1 large red onion, cut into wedges (200 g)
  • 120 g feta, crumbled
  • 45 ml extra-virgin olive oil (41 g)
  • 30 ml lemon juice (30 g)
  • 25 g flat-leaf parsley, chopped
  • 3 g ground cumin
  • 1 g iodised table salt
  • Ground black pepper, to taste

Method

  1. Heat the oven to 210C/410F. Toss the capsicum, zucchini and onion with two-thirds of the oil, the cumin and the salt and roast 30-35 minutes, until the edges have caught.
  2. Simmer the lentils in plenty of water for 18-20 minutes, until tender but still holding their shape. Red lentils go to purée fast, so start testing at 15 minutes and drain them the moment they are done.
  3. Fold the drained lentils, roast vegetables, remaining oil and lemon juice together while everything is still warm.
  4. Stir the parsley through and scatter the feta over.

Keeps 3 days and is better on day two. Add the parsley fresh.

Reheat to
steaming hot, at least 60°C

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
