Ingredients

Why metric?

Metric avoids regional spoon ambiguity. US uses 5 mL tsp, 15 mL tbsp and 240 mL cup. Small masses stay in grams unless a verified recipe conversion exists. More on measurements

  • 250 g red lentils (dry), rinsed
  • 250 g carrot, diced
  • 2 celery sticks, diced (100 g)
  • 1 large onion, chopped (200 g)
  • 3 garlic cloves, chopped (15 g)
  • 30 ml extra-virgin olive oil (27 g)
  • 4 g ground cumin
  • 1.2 litres reduced-salt vegetable stock, labelled gluten free (1200 g)
  • 25 ml lemon juice (25 g)
  • 15 g flat-leaf parsley, chopped
  • 2 g iodised table salt, plus more to taste
  • Ground black pepper, to taste

Method

  1. Warm the oil in a large saucepan over medium-low heat and cook the onion, carrot and celery with the salt for 10 minutes, until softened and starting to sweeten.
  2. Add the garlic and cumin and stir for 1 minute, until it smells toasted rather than dusty.
  3. Add the lentils and stock, bring to a simmer and cook 25-30 minutes, stirring now and then and scraping the base. Red lentils sink and catch, and a burnt bottom flavours the whole pot.
  4. It is ready when the lentils have lost their shape entirely and the soup coats the back of a spoon. Add a splash of water if it has gone further than that.
  5. Stir in the lemon juice and parsley off the heat, then taste for salt and add plenty of pepper. The lemon is what stops it tasting flat, so add it before you reach for more salt.

Tomorrow

Thickens overnight into something closer to dhal; loosen with water or stock.
