Why metric?

  • 40 ml extra-virgin olive oil (36 g)
  • 1 small brown onion, finely sliced (100 g)
  • 1 large red capsicum, finely sliced (200 g)
  • 3 g smoked paprika
  • 1 g ground cumin
  • 150 g cherry tomatoes, halved
  • 400 g silken tofu, drained
  • 6 g chives, snipped
  • 3 thick slices soft white bread (150 g), crusts trimmed
  • 0.5 g iodised table salt
  • Ground black pepper, to taste

Method

  1. Warm the oil in a frying pan over medium heat and cook the onion and capsicum with the salt for 10-12 minutes, stirring, until both have collapsed and sweetened. Sliced capsicum that still has spring in it has not had long enough.
  2. Stir in the smoked paprika and cumin for 30 seconds, until they smell toasted rather than raw.
  3. Add the tomatoes and cook 4-5 minutes until they burst. Press them with the back of the spoon so the skins break up into the sauce rather than sitting whole.
  4. Add the tofu in large spoonfuls and warm through for 3-4 minutes, folding gently two or three times only. It will break into soft curds; stirring hard turns it to liquid, and long cooking dries it.
  5. Warm the bread rather than toasting it crisp. Scatter the scramble with chives, grind over pepper and serve straight from the pan.
