Why metric?

  • 35 ml extra-virgin olive oil (32 g)
  • 1 small brown onion, finely chopped (100 g)
  • 120 g carrot, diced
  • 2 celery sticks, diced (100 g)
  • 2 garlic cloves, chopped (10 g)
  • 400 g canned no-added-salt tomatoes
  • 150 ml reduced-salt vegetable stock (150 g)
  • 450 ml water (450 g)
  • 240 g canned cannellini beans, drained and rinsed
  • 130 g macaroni (dry)
  • 12 g fresh basil leaves, torn
  • 15 g parmesan, finely grated
  • Iodised table salt, to taste
  • Ground black pepper, to taste

Method

  1. Warm the oil in a large saucepan over medium-low heat and cook the onion, carrot and celery with a pinch of salt for 10 minutes, stirring occasionally. Take your time here: this slow softening is where the sweetness comes from.
  2. Add the garlic for a minute, then the tomatoes, crushing them against the pan, with the stock and water. Bring to the boil and simmer 12 minutes.
  3. Add the beans and macaroni and simmer 8-10 minutes more, until the pasta is tender. The pasta drinks up a good deal of the broth, which is how minestrone is meant to end up; loosen with hot water if it goes past thick to stodgy.
  4. Stir in the basil, grind in pepper and taste for salt.
  5. Ladle into bowls and finish with the parmesan.

Cooked rice and pasta keep two days rather than three, so this dish takes the shorter time. Cool and cover within two hours, split large amounts into shallow containers, and reheat until steaming hot, at least 60°C.
