30 ml extra-virgin olive oil (27 g)
1 small brown onion, finely sliced (100 g)
1 large red capsicum, sliced (200 g)
2 garlic cloves, sliced (10 g)
2 g ground cumin
2 g smoked paprika
400 g canned no-added-salt tomatoes
4 eggs (204 g, shelled)
8 g flat-leaf parsley, chopped
4 thick slices wholegrain bread (160 g), to serve
1 g iodised table salt, plus more to taste

Method
Warm the oil in a wide frying pan over medium heat. Cook the onion and capsicum with a pinch of the salt for 8-10 minutes, stirring now and then, until both have collapsed and taken a little colour at the edges.
Add the garlic, cumin and smoked paprika and stir for 30 seconds, until the spices smell toasted rather than raw.
Tip in the tomatoes, crushing the whole ones against the side of the pan. Add the remaining salt and simmer 8 minutes, until the sauce holds a trough when you drag a spoon through it.
Make four hollows in the sauce and crack an egg into each. Cover the pan and cook 5-7 minutes over low heat, until the whites are set and the yolks still move when you shake the pan.
Scatter with parsley, grind over pepper and serve straight from the pan with the bread for scooping.
